The pizzas are always good, and you can share a big salad of wonderful greens before it comes. It's always good; I've never been disappointed.

Delicious, crispy crust, light, not greasy and a huge variety of sizes and toppings. All toppings are fresh. Service excellent.

I am not sure why I haven't posted a review about Proto's earlier...the place does a fine job for those looking for a pizza, fresh salads and other terrific options as well. A great partnership is had with the Lefthand Brewery...one can find different options from the brewery on tap. That is an amazing combination...awesome pizza and a beer from Lefthand!!!!
The waitstaff at the Proto's in Longmont are very friendly and attentive!

Service was slow. The margherita pizza was truly awful and not at allwhat I expected from a Neapolitan margherita. The crust was cracker-like, with little chew. The first pizza was still raw on top. The San Marzano tomatoes were simply unseasoned hunks of tomato, not sauced at all. No olive oil, no S&P. The cheese was barely melted. The salad was excellent - a nice mix of field greens with a couple of tomatoes and a little feta. The leaves were uniformly but lightly coated and still crisp, so they made that immediately before serving.

Perhaps they were having some oven problems, but this was not even passable "bar pizza." Need to take a lot more care with how the ingredients are prepared to be able to claim this is Neapolitan pizza.

Proto's Pizza is not for the budget minded. The food is made fesh and it tastes fresh. The pizzas are thin crust and there is a gourmet simplicity about them. There is a good variety of ready-to-order pizzas listed on the menu, or you can build your own. Two of us had one small and one medium pizza, two salads, two iced teas, & two desserts for about $55 after tax and not including the tip. You definitely get an Italian pizzeria culinary experience and the food is very good too!
