Description: Chef Regan is a rising star in the valley. Her dishes shine far beyond flavor and presentation. Innovative dishes combined with the freshest local ingredients have earned her a reputation of DE-LIGHTRESS.Oh! But let's not forget Regan's desserts... TEMPTRESS.... comes to mind, with one taste of her decadent chocolate souffle! The Dining Room at the Windsor is all aglow with local patrons' and travelers' raves and reviews. Come in, enjoy the service and know that tasting IS believing! Kodi Whitehead, our own local starling, returning to the valley with his wife, Regan, this last spring. As the Food and Beverage Director, Kodi brings his appreciation, experience and formal training as a Sommelier (from the Court of Master Sommeliers). Yet, Wines are only the beginning... what an excellent and fun evening to be had, learning from your host, about fine foods and drink. The Dining Room, at the Windsor, is looking forward to your arrival and providing you with a superb and 4th dimension dining experience!

The schnitzel special's deliciousness at lunch was soon relegated to the distance by the straight-from-the-oven peach pie w/ homemade vanilla ice cream. Once again, easily worth the 2 hour drive.

Oh.My.Stars! Just returned from a fabulous dinner at the Windsor Hotel in Del Norte, CO. Now this town is in the San Luis Valley -- an area that is somewhat off the beaten path, especially this time of year. But despite being in a sparsely populated town (except during high tourist season), there is the GEM of a restaurant with a European-trained, award-winning chef!

Chef Urs Balmer and his wife, Hallie, could not have been more welcoming or accommodating and the food was absolutely world-class. (Chef Urs was Executive Chef at the Beverly Wilshire Hotel in Beverly Hills, CA for 13 years.)

Everyone in our party had an appetizer of a lightly, breaded fried shrimp with shredded Napa cabbage and salsa -- delicious. Several of us had black bean & bacon soup, served with a dollop of sour cream. I had lamp chops with some kind of wonderful sauce and green beans (Haricot Verts-style). My companions had Perch, Ravioli, and a pork schnitzel. Everyone raved about the food. I'm from Austin, TX, where the restaurant landscape has become increasingly competitive and sophisticated and this food stands up to anything I've had there. It surpasses many, many places in Austin.

The hotel and dining rooms are lovingly restored, lending an air of yesteryear elegance.

Note: if you're into huge portions of chicken fried something and vegetables out of a can, this is not the place for you. This food is highly flavorful, in portions that exactly satisfy, but are not overwhelming.

Almost a year ago, we visited the Hotel for lunch and really enjoyed it. Now, almost a year later, we returned to find it still at the high quality of the previous visit. Chef Urs and Host Hallie have put an immense amount of energy into the restoration of the Hotel and restaurant in a remote portion of Colorado. THEY HAVE SUCCEEDED! Expect excellent food and local wait-staff that try very hard to please. Any request or concern, Urs and Hallie will do their very accommodate them.

I am so glad that I tried the food at the hotel. The chef (the owner) made us feel at home and cooked our dinner personally. He is a great cook and served some wonderful dishes. I would recommend this place to everyone who is looking for a great meal and great atmosphere.
