I've eaten at Rudy's BBQ many times, both in Texas and in Colorado. The Colorado Springs location is rather new...maybe 2-3 years old. When you show up (at the corner of 31st & Hwy 24), you'll first notice that it's co-located with a gas station. Don't let that deter you from enjoying some awesome BBQ!
Rudy's is a casual dining experience. You enter, stand in in line, and then rather order a meal, you order your meats by the pound. They have a pretty good selection of brisket, pork loin, turkey breast, sausage, chicken, etc. and 4-5 solid side dishes. I'm all about the meat, so I'll usually order 1/2 pound or so of 3 different meats (so I can have leftovers to take home). I'm partial to the turkey, pork, and brisket. When you order, they'll also give you some slices of bread (in case you want to make a sandwich).
After ordering, you need to find a seat. This is another difference between Rudy's and most casual places: almost all of Rudy's seating is on large picnic benches. Go find a few seats that you need, and you may be a seat or two away from another person/family.
Rudy's also has their very own BBQ sauce (delish!) and condiment bar (peppers, onions, etc.). They serve great breakfast tacos as well. I've even been there for an office function as they have a room in the back that holds 40-50 people. Outdoor seating is available for warm summer days/evenings.
I love Rudy's BBQ so much that when I drive back from Manitou Springs or Woodland Park to CO Springs, I'll stop there half the time to get some food...the last time was lunch a few weeks ago. Highly recommend this place!
