My families visit to Joseph's was incredible. We were vacationing in Colorado, it was my sons birthday. Not knowing anything about restaurants in the Colorado Springs area we accessed the internet for ideas. After scrolling past the usual chain suspects and over priced tourist hangs Joesph's seemed to jump off the page. After a call for reservations we were on our way. I must say we made the right choice because our experience turned out to be the best meal we had on our vacation. :) The service was excellent, relaxed, and very friendly. The atmosphere quaint and happy :) The food was wonderful. We savored and enjoyed the "Peppered Tenderloin" prepared table side Flambe style by Joseph himself. The kids ordered their tenderloins medium, my wife and I, medium rare. Both steaks were cooked perfectly and complimented well with a delightful salad, mashed potatos and asparagus. Joseph and his wait staff presented my son with a large decadent piece of moist rich chocolate cake for his birthday. Under normal circumstances that cake would have been enough to satisfy all our of our sweet tooths. But I had not had a "Cherries Jubliee" for years and couldnt resist the temptation. So Joseph returned to prepare a "Cherries Jubliee" table side Flambe style and it was as wonderful and decadent as the chocolate cake. Table side meal preparation Flambe style is a dying art because it takes more time. Now days restaurants want to turn those tables. My family and I are happy that Joseph is doing his best to keep it alive. We will visit Joseph's again. If we lived in Colorado Springs we would become regular customers. And by the way, Joseph is not only a great cook, he is also a pretty nice guy. :)
