I saw the sign for Happy Canyon and needed to see what it looked like. We drove until we found a downtown area. We found Miyo Café and gave it a try. Worth the drive about 10 minutes west of I-25 Castle Rock. I had the breakfast tostada with coffee and Katie had a breakfast burrito. Great food. There were many locals eating outside at 8:00 am and the place was busy. Take the road less travelled and stop in at Miyo Café in Happy Canyon.

This is a nice place for breakfast, lunch or just a cup of coffee. I had the breakfast platter which included a little bit of everything and was the perfect amount if food. The staff are friendly and the prices are very reasonable. I stopped by on my way through the area, if you are in Castle Rock or just passing through you should give this place a try.

Found this hidden gem after finishing a morning workout. Super friendly local owners and staff. All items are made with fresh ingredients and it really shows. Lots of care goes into every order from the fantastic double bacon BBLT to the bacon pancakes, scones, salads, etc. Go early because it's only open for breakfast and lunch. Definitely worth the trip to Castle Pines Village shops.

Showed up at 7:30. Still not open. We were excited to try a non - chain restaurant off the beaten path. Hope everyone is doing OK.

We had eggs over easy and a cinnamon roll. The food was great and they have a large assortment of baked goods. The restaurant looks like a coffee shop when you first enter, but there is a full service kitchen. Nice outdoor seating as well!
