Handy to I-25, and situated between Denver and Colorado Springs, it's a convenient venue. Ate there for the first today, and we were impressed with the food and the service. We'll go back. I had the chilies relleno, and my lovely bride of 49 years had tacos. We were both pleased.

The service was great, very friendly. They were very busy and short staffed but was still sarisfied with it. The food was terrible. I don't like yellow cheese dip! I had a tamale and enchilada, The chicken was dry. The sauce didnt do it for me. The rice was good but not to sure how you can mess that up? Wont go back.

We have found a new favorite restaurant--Guadalajara's Restaurant in Castle Rock. This place is amazing--REALLY good food, friendly atmosphere, easy to get to off the highway, and the people that work there seem to really appreciate the patronage. They are genuinely friendly and helpful--coming by just often enough to refresh water, clean up used dishes, offer dessert...It was just a great experience all the way around.

Five of us, all seniors, were the first guests to arrive when the restaurant opened. We were seated at a 6 top with our menus and served water immediately. Menu selections with pictures looked amazing. Pricing was a little high for lunch. We all ordered and were served in a timely fashion. Our drinks were refilled once during our meal and our plates were cleared away as needed. I had a chile relleno with a cheese enchilada combo plate. The relleno was just okay and the enchilada had a very odd flavor...not sure if it was the sauce or what. We eat Mexican food at least twice a week so are well versed in great tasting food. When we were finished with our meals we sat visiting for awhile. After a total of 1 hour and 5 minutes in the restaurant, our waiter asked us to leave because there were people waiting. Needless to say with just so-so food and a rude finale we will never walk through Guadalajara's doors again.
