Our trip could not have been complete without our visit to the Briar Rose which is a recreation of a salon boarding house during the silver rush of the late 1800.
The menu has aged beef, elk, duck, buffalo and chicken. Our group had the aged strip steak, the ribeye and the cast iron chicken (whole chicken split and cooked flat)
I had the special of the night which was a bone in buffalo ribeye cooked medium rare. Topped with a lingonberry reduction made it
perfectly pleasing to my tummy!! My son had the Tabasco jalapeno reduction (don't worry not hot at all)
Fantastic. Family style sides are served to the table. We had Brussels sprouts with chorizo, fresh creamed corn with chèvre and green chilies. Oh I forgot my appetizer jumbo shrimp cocktail with horseradish pane cotta pure delight!!
