As a local, I love this place and with spring/summer upon us, it gets busy for breakfast with campers, anglers and the like. There's a reason why: It's great food with a super-friendly staff.

“Good breakfast at a good price”

I've mainly been to the Cutthroat for breakfast. It's good food, simply served by friendly staff. I like the biscuits and gravy and the chili rellenos are decent. Cutthroat get it's name from Cutthroat trout. You're made to feel welcome there. Atmosphere is family oriented. Well lite. There is a small patio out back.

“Cutthroat is "down-home"!!”

The Cutthroat Cafe is down-home cooking at it's best. Locally owned and managed, they use local students and people to serve their customers. They are very active in supporting local schools, sports and activities of any kind. The owner, Chip Thomas,is a wonderful man who has been in the restaurant business for years and is a fabulous cook. They open at 5am for local commuters and those coming up from Denver to hike, bike, hunt and fish in the foothills of the Rocky Mountains.....we highly recomment the Cutthroat Cafe!!!

“Best Breakfast and Best Peoples”

I enjoy the occasional breakfast at Cutthroat. The Reel Deal breakfast is awesome and more than enough. The biscuits & gravy are great. (as long as they don't microwave the biscuits). The people are friendly as can be.
A hometown business with a hometown feel.

“The place to meet in Bailey”

The Cutthroat is the place to meet in Bailey. It is most popular for breakfasts and is a stopping place for people traveling through Bailey into the mountains because it opens so early. There are great menu selections and the prices are reasonable. Chip, the owner, is kind of like the unofficial "mayor" of Bailey. He is great supporter of community activities, employs lots of young folks, and knows everyone who has ever come through the doors more than one time. The Cutthroat is filled with trout fishing mementos. Chip is an avid fisherman and everyone loves him so much that they bring him things they find on their journeys that has to do with fish or fishing. If you come, give yourself time to talk to everyone in the place. You will see old friends and make new ones.
