This is the flagship restaurant of the Culinary Institute, and would have been a highlight of our trip, had it not been for the busload of people being served before us. The food is delicious and well-prepared and the presentation excellent, but we waited 90 minutes between arriving and being served our salads. The manager did take several items off the bill as a result, but we had to complain. Sit inside if you want to see the craziness of the open kitchens, sit outside if you want a more serene country-side view.

Greystone is a fabulous location, just slightly on a hill and the stonework on the building is very nice. The facilities are quite huge, with numerous buildings on site. I was part of a group of about 40 people so we had a limited menu of salmon or chicken. They started off with small appetizers, some of which were really good, especially the pate, some of which were just okay. The salmon itself was very good, it was prepared in a sauce with a variety of beans. Very flaky, cooked just right, not overdone. The chocolate lava cake was delicious, and the creme brulee was also very good. We had four samples of wine with dinner, the wine selections were just okay, not great, two whites and two reds.

Excellent ambiance; excellent food; service was lacking, especially when selecting the wine / food pairing. The whole point is to have the wine and food together, so why would we want to wait for either? First course wine was served well before the food arrived, second course was the exact opposite; by the third course we had given up. A disappointment that we will not repeat. There are many other good options nearby.

This is one of our must-go restaurants in the Sonoma/Napa wine country. Prices are a bit above average, but the food is exceptional. Our last trip here (on Sept. 8, 2012) was a lunch outing. We made no reservation, and had no problems getting in. The four previous times we had been here, we had made a reservation, so we were happy to have gotten in. (I'd recommend a reservation.) To be different, we sat at the bar area. That way we could watch the chefs at work. Actually kind of fun. I had a salmon entree, and my wife had a prix fixe that was prepared by one of two student chefs. In short, it was all delicious. The ambiance, the service, and the cuisine all made for a very nice experience. Oh, and speaking of service, the bartender was great.

One tip: when going in the late summer, early autumn months, sitting outside is not recommended because of the bees. They can be ferocious, crawl on your food, and even sting.

Discerning travelers owe it to themselves to eat here at least once. We ate twice -- grabbed a quick bite at lunch to get through one or two more tastings, then came back for dinner (with reservation). What a fabulous experience! We sat outside on the patio and witnessed an amazing sunset. Our waitress was personable and knowledgeable, and persuaded us to try the evening's prix fix menu, and every dish and accompanying wine was outstanding. I took a photo of one course because it was simply beautiful. I STRONGLY recommend this restaurant.
