A colleague suggested a lunch meeting at Pavich's. Since it was his meeting and others were involved, I went along. I figured I could have a sandwich or something - anything but pizza. I once loved pizza, but that was in the 80's when they made it right. I gave up on pizza when the flurry of pop-up pizza joints invaded our cities. They all basically tasted the same - institutional and canned. So, to me, Pavich's was just another one of those. When we got there, the owner chided me for not ordering pizza in a world class pizza restaurant. It was all in fun, but I decided . . . OK, show me what you've got. He suggested the individual Croatian pizza and I went along, figuring that I would slowly eat a slice and take the rest home to the trash. Well . . . was I wrong! Honestly, this is the BEST pizza I have ever had - with the exception of the scrumptious pizza I had in Naples, Italy. Pavich serves a thin crust pizza that doesn't look and taste like cardboard. The crust is absolutely lip-smacking! The fresh ingredients and perhaps the brick oven lend to a truly delectable experience, and the "individual" pizza size is huge! Halfway through our meal, the owner came over and asked me to lift what was left of my pizza off of the paper underneath. No grease! I am in love with pizza again . . . and it looks like the second time around is gonna be fantastic!
