Just because there's a billboard advertising this place on the highway doesn't make it any less cute and quaint. We were a little worried at first but ended up very happy with the cheese.

On a whim after seeing their billboard along Highway 101, we decided to stop at the Loleta Cheese Factory. We observed how the made cheese and sampled many varieties of their product. WARNING: You will probably wind up buying some chesse while visiting, there are many tasty varieties you will want to return home with!

The Loleta Cheese Factory is a must stop for my family whenever we are in the Eureka area....I even bring a cooler with me to put my purchases in to bring home. The cheeses there are all made on site with milk from local dairies. The hickory smoked cheddar is amazing and my new favorite. I also love the smoked salmon cheddar. My wife loves the cheese curds. There is a tasting room so that you can try out each cheese while deciding on your purchases. It is open 7 days a week and it is only a short distance from 101. So, take the time to stop and taste some of the best cheese you will ever have!

Depending upon when you arrive you will see a different part of the cheese making process in action. No matter when you arrive, there are always plenty of samples of cheese. Many of the cheeses are based upon colby cheese, though they also make fontina.

When we came there was someone to explain what was happening. There were two tanks in view, one was cooking the milk and the other was getting ready to drain the cheese and make it ready. After draining the mix, the draw off the whey and send it back to the farm, and then will add salt and other flavorings such as jalapeno, green chili,... All the cheeses are tasty, and they send some of it to be cold smoked.

We stayed for close to 45 minutes and enjoying watching the process and tasting the end result.

We didn't get to see the cheese being made but we we're able to taste lots of delicious cheeses! We bought lots to take back to hotel and enjoy on our trip. The wines they are offer are less than to be desired but that's not what we came for anyway. :)
