Description: The first restaurant was opened in 1983 in San Diego by Ralph Rubio and his father, Ray, who started the fish taco phenomenon that spread across the nation. Today, Rubio’s menu has grown from The Original Fish Taco® to include additional chef-crafted seafood recipes that feature shrimp, wild salmon and ono. In addition to sustainable seafood, Rubio’s offers chargrilled chicken and steak, fresh made guacamole and salsas and sauces that are prepared daily.

“A Mexican Surprise”

I've always loved fish tacos but, in traveling throughout Mexico, New Mexico, and Southern California, I've found few places that produce a good product. Rubios Fresh mexican Grill in Fairfield (and presumably in other locations) have created a fish taco that is the best I've ever tasted. The fish is solid, not soft and oily. It is covered with a salsa blend that is tasty but not overly spicy. The tacos come with a generous serving of fresh chips and beans. Another surprise was the restaurant itself. I expected a small taco bar but Rubios in Fairfield is spacious, clean, quiet, and bright with natural light. Outdor seating is also available. I highly recommend this place if you are tired of traditional tacos filled with red meat.
