This tiny restaurant has it all. The food is unbelieavably fantastic. The service is top-notch. Sam is wonderful. The place is unpretentious. It's casual and is the kind of place where you want to meet friends and have an excellent meal and some wine. We had heard great things about Allez, and decided it was time we tried it. I had the cassoulet, which was a special that night, and my wife had coq au vin. Both entrees were off-the-charts good. The cassoulet was loaded with sausage, duck, lamb and of course, white beans. Incredible. The coq was served with a side of garlic mashed potatoes, which was perfect for sopping up the the delicious gravy. There were chunks of tender chicken, carrots and small pearly onions. Just a perfect combination of flavors. Who would have thought there would be a French bistro in Diamond Springs this good? We sure didn't, but we are now believers. It is a place where you want to be a regular. The prices are reasonable, even the wine prices are extremely affordable. Great food at a great price with excellent service. That says it all.
