First order of business-grab a drink at the Lobby Bar when Mike Yen is there. He's the Master Molecular Mixologist Man-just a doll and he's "Googleable" too. Fortunately for the Management but sometimes unfortunate for the Patron this place gets über slammed and he is creatively limited by the high demand and volume of this Establishment. If you're fortunate enough to arrive at a time when he's not the hardest working man in North America-chat him up and see what he can suggest. His palate is impeccable and he knows his way around a wine list too. Food: as for the old and the new...new Chef and new dishes on the Menu are great and I'd love to see what could happen if they cut the new Chef loose completely. Nice flavors, great plating, all 5 star material.
Old....for the sake of the regulars they kept the previous Chefs bests since there is still some buzz and demand for those dishes. I think it's smart since the guys in the Kitchen can still pull it off flawlessly even without the former Toque' in charge. Great location, pretty decor, great flavors.

Great menu including including Breakfast Lunch and Dinner. They grow their own herbs on the patio. The menu is fresh and never boring.

I debated long and hard whether to give Kitchen 1540 3 stars (Average) or 4 stars (Very Good). Some aspects were average and some were excellent, but my overall impression and the fact that I would likely not return led me to give it just an Average score. They really should swap the casual Waterfall Terrace with the Kitchen 1540 or have Kitchen 1540 seating with an ocean view. I would definitely return to the Waterfall Terrace.

Atmosphere: Average, although getting a cabana outdoors is a rather nice way to have dinner.

View: None, which took away from the cabana experience when we realized that we could be having drinks and a casual meal at the Waterfall Terrace overlooking the ocean.

Wait Staff: Excellent. They were nice, knowledgeable, and attentive.

Food: The John Dory fish was very good, and the yukon gnocchi that came with it was incredible (order a side). The mushroom carbonara side was also excellent (what's there not to like about cream sauce with bacon?). Unfortunately, the appetizer salad (Artisan's Lettuce) was average at best. And the funnel cake dessert was about the worst thing we've ever had.

Wine List: The wine list, and especially the wines by the glass, was very average.

Overall, our experience was just average. I would skip Kitchen 1540 and go to the Waterfall Terrace, which has amazing ocean views and a more traditional menu.

This designer eatery has a very chic and fun atmosphere with indoor or outdoor seating. Our outdoor table was flanked by a waterfall and a firepit - so perfectly zen! The menu was amazing - so hard to choose what to eat. We asked for recommendations and were not steared wrong by any means. We had the scallops to start, followed by the chilled beet salad and then I had Lamb and my husband had Halibut. Every bite we put in our mouth was so enjoyable - from the surprise sauces to the taste of fresh herbs (grown right there on the patio), we enjoyed our dinner completely...and polished off our plates. Mom would be so proud!

Although we would have liked to had dessert, nothing on the menu stood out as complimenting what we had just eaten. The items were a bit over the top and complicated. Wish they had something more comfort-food friendly using some of the fabulous fresh fruits from the area. Maybe a petite fresh fruit cobbler??

Go try it though, and sit outside for sure. You get a whole different dining experience not being cooped up inside.
