I can't remember the last time we had a meal that was flawless from start to finish. The ginger salsa with fried wontons was great. We had the abalone ($50 and worth it) and the almond sea bass. Both were cooked to perfection. Moist with a crunch on the outside. Dessert was a banana tempura sundae that was wonderful. More than just cooked well, everything is so inventive and different than anything I've ever had. But never at risk of losing the flavors just to be different. Other restaurants can give you a good meal, but it's one that you can get anywhere. The Flying Fish is an experience you can't get anywhere else.
