Travelled with a group who stayed at the Hilton, but I booked late and was unable to get in. I was recommended Pension Brook. Great place to stay. The owners were really friendly and helpful, it was quiet and clean in a pretty location. Also a gentle taste of Japanese culture
Highly recommeded, and that's from someone who normally will not stay in less than a 4*

We booked our trip through Rakuten.com (a Japanese website) and bought a package deal. Brook was one of our options and we're so happy we chose there! We stayed for just ver a week for snowboarding. It's situated on your way to the Hilton Niseko so the owner was very happy to drive us to and from Higashiyama and Annapuri mountains, and he was also willing to take us to a locan onsen.
We were happy with our rooms which were very clean and spacious, with a view of Mt.Yotei. I recommend you staying in a tatami room, which we moved to on the second night.
Be warned though,if you're looking for a party place, it's better to stay in Hirafu village (which I wanted to do at first), but I'm glad that we decided to stay in Niseko area as it seemed fresher and more tranquil. Hirafu is just a bus ride away (about 15mins) so you can still party, but after being on the slopes all day I just wanted to go to the onsen and eat dinner. By the way, the owner's wife is a great cook and meals are a mixture of Japanese and Western,but if you wanna eat out, I also highly recommend Black Diamond Cafe which is about a 5min walk away.

*** Also, their English isn't perfect but they try really hard to communicate with you***

Overall, we're planning to stay there again next year due to the charm and warmth of the place... it was soooo hard to leave. And it didn't help matters that they have a cute little Schnauser named Rin-chan who would bounce about in the snow!!
