My wife and I were very impressed from the start with our stay at CassLana.
Lana made us feel at home with great dining tips, enjoyable conversation, quite and comfortable atmosphere, and a delicious breakfast cooked personally in her chefs kitchen. What more can you ask for? Need to mention CasaLana is located in the beautiful Calistoga appellation with some of the best wineries in the world?

My wife and I were in Calistoga for a wedding during Harvest when we stayed with Lana. Our experience was excellent in every respect: gourmet breakfast cooked by Lana; idyllic setting off the beaten path; clean, modern and spacious rooms with comfortable king-size bed; quiet and tranquil location; very clean; convenient location walking distance to town or a few miles drive to neighboring towns. Lana was a gracious host and made our stay memorable. We didn't partake in the cooking classes but the beautiful, modern, commercial kitchen looked ready to educate new chefs .

Fabulous Cooking Classes and B&B

To celebrate my 50th birthday, Sharon and I attended the 5 day boot camp for cooks in June 2009. We wholeheartedly recommend it and would return in a heartbeat.

Classes:
Each morning our class of four gathered on the patio to review the plan for the day. Lana walked us through our comprehensive instruction binders and answered our questions. Then we got straight into it. During our hands-on preparation Lana would demonstrate different methods and techniques for us to learn and use. (See Binders below.) The class collaborated on that day's three course menu, then experienced plating/presenting, followed by enjoying the meal together on the patio with wine and laughter. Then we went our separate ways (or not) to explore the Napa Valley. Pretty great, eh?

Take-Home Binders:
This excellent resource included: agenda for each day, cooking theory and practice, glossary, menu for each day and many recipes. During the classes we learned about and practised knife skills, stocks, soups, sauces, salsas, baking of various kinds and cooking techniques for poultry, vegetables, grains, meats and fish. We also learned some rescue techniques when the inevitable happened...

Kitchen:
The large kitchen was well organized and had stations for each of us. Though professional grade, the equipment was similar to what you might have at home and, as a result, was not intimidating. The ingredients for the recipes for the day were always ready for us; Lana is very well organized. The photos on Lana's website portray the kitchen, gardens and house very accurately.

Field Trips:
In addition to excellent instruction in her home, Lana took us on two field trips. The first was to a huge farmer's market where we looked, smelled and tasted our way through at least 80 stalls. For visitors from Victoria, British Columbia, this was great experience. The second was to Chalk Hill Winery and its excellent culinary tour. It began with a tour through the property, then a visit to the gardens and conversation with the gardener, followed by a fantastic multi-course meal and wine tasting in the pavilion and dressage ring, topped off by a conversation with Chef Didier. If you ever plan to be near Chalk Hill Winery please do yourself a favour and book ahead for the culinary tour...you will not regret it.

Instructor:
Lana is a communication professional as well as a knowledgeable, skillful and accomplished chef. Lana provided advice appropriate to each of the class members throughout the 5 day boot camp for cooks. Lana also offered tips and tricks such as the easy way to take the skins off hazel nuts, how to make your own ricotta cheese, etc. etc.

Location:
Casa Lana is located on a very quiet street. The house is surrounded by gardens and backs onto the Napa River. However, a short stroll down tree-lined residential streets takes you to downtown Calistoga. The main street is lined with shops, restaurants, bars/lounges, an inn with excellent locally brewed beer and cider (yum!) and a well stocked grocery store. Lana provides excellent advice on which restaurants and wineries to try in the area.

House and Rooms:
Casa Lana is a Mediterranian-styled building accommodating the instruction kitchen, Lana's living areas and two B&B rooms. Each B&B room has its own exterior entrance. We were lucky enough to book the Palisades Room on the second floor with views of the gardens, Napa River and the mountains beyond. Our room can best be described as large and comfortable; as in bedroom, bed and bathroom with coffee counter, bar fridge and separate tub and shower. One of our classmates stayed in the Arbor Room and was very happy as well.

Breakfast:
What can be better than waking to the smell of baking? We enjoyed tasty, healthy breakfasts each morning while seated on the patio overlooking the large gardens and enjoying the sounds of birds and the river. Lana patiently described the dishes to us; students as well as guests. All five days were different and all of the breakfasts were delicious.

Thank you Lana for a fabulous vacation. Stephen and Sharon.

We travel a lot and when you walk into a place and immediately feel comfortable, I think that speaks volumes. Privacy is a non issue as the rooms each have their own private entrance. CasaLana is in easy walking distance to the center of town and with the property tucked back in the neighborhood you feel more like one of the locals and less like a tourist. It's also very quite unlike some of the hotels in Nappa. Lana was a perfect host serving us tasty breakfasts and making suggestions on wineries to visit and places to eat. We would stay there again in a heart beat and hopefully next time we will be able to work our schedules to get into her cooking classes.

My husband purchased a two day culinary experience for me as a birthday gift. I had been wanting to do this for some time and was thrilled at the opportunity. We chose Casa Lana because of the intimate class size and location of the property. Lana was so wonderful to cook with. She not only teaches you the specific recipe, she offers great alternatives to them as well. We will be keeping our eye on her calendar to do this again soon.

I recommend staying at the B&B if there is room as well. The facility is beautiful and the breakfast was tasty.

Thanks Lana for making our experience enjoyable and memorable. We will certainly be seeing you again!
