Enjoying paella at Ayo's is not just about the dish itself. It is the experience of watching the famous dish being created over a huge open fire; watching the 'seconds' lines form when a fresh one is being brought from the fire to the serving table; marvelling at the speed of service that sees hundreds served during a weekend lunchtime and enjoying the simple pleasure of life, sipping an excellent sangria listening to the happy chatter of the locals whose extended families all seem to congregate here on a Sunday.
