Award-winning South African Chef Chantel Dartnall is known for presenting the art of nature on her plates through her botanical cuisine to take you on a culinary tour of pure indulgence. Bask in the sophisticated atmosphere of exotic spaces; an Oriental style oasis set in lush and tranquil 280h of the Francolin Conservancy. Head chef at the award-winning Restaurant Mosaic, Chantel likes nothing better than presenting the art of nature on diners’ plates and she and her team thrive on refining and showcasing botanical cuisine in their dishes.

An half hour drive out to the west of Pretoria - and you are into The Orient's estate, complete with free wildlife roaming. We visited the hotel as overnight guests (2 nights) once at the occasion of my wife's 50 birthday celebration. We stayed in a magnificent suite and were treated like royalty. The architecture of this orientally inspired hotel, with beautifully manicured gardens, and luxurious small cinema (for pre-dinner private movie-going) makes for an experience that simply is not forgotten. A big feather in the cap also for Mari Dartnell who spares no cost or fine detail to impress around every corner.

But the crowning glory of The Orient, is the Restaurant Mosaic. We have dined there three times, and every time Chantal produced culinary experiences with her 5 - 8 course luncheons and dinners that vie with the best of Franschhoek - and, yes, France itself! Not to mention the highly professional and top class wines and wine-pairing offers. Every dish is a piece of artwork and presented with the finest pizzazz and fine touch. Always different and highly creative owing to Chantal's innovative cooking aspirations, always in style and good taste. This would go for her famed duckling to perfect fillet, and soups and desserts like you will find nowhere else. That even goes for our complimentary continental breakfast that was sent up to our room when we stayed overnight.

The restaurant is intimate and beautifully decorated - a casual ambience but with distinct luxurious look and feel. There can be no doubt - Mosaic, although for sure not cheap, causes one to depart with a feeling of having been utterly pampered with really good value for money. An experience of gastronomic delight that you will not easily find elsewhere in the country. 5* plus - le magnifique!

We stayed at the Orient Boutique Hotel and as such were fortunate enough to have 2 multi-course menu’s from the chef Chantel Dartnall at Restaurant Mosaic.

Dinner was something to behold. It was her 10 course Nature’s Nuances Grande Degustation menu. Each course was absolutely beautifully presented with flavour combinations that blow your mind. From subtle nuances of organic greens to bold taste and texture combinations. As Chantel does, each dish looks like an artwork, and actually our first dish was an artwork, on a miniature easel with paintbrush and all. And you eat it like that!! Brilliance! There were too many dishes to describe each one in detail, but each dish did provide a new experience for the senses. And the sizes of the portions were also enough to ensure that you do not over indulge. Awesome!

Lunch the following day was another experience that we won’t forget. Chantel came to the pool and told us that as she is experimenting with her new menu for 2013 and is going to give us that for lunch and that we should criticize her food and give our feedback. Well, what a privileged!! And there we sat again with another 8 course menu, tasting the new food, and giving her our feedback. But there wasn't really any feedback that we could give except for praise, as the dishes were yet again, beautifully presented and taste explosions! Pure food bliss!

Service throughout the dinner and lunch were top notch, as the waiters presented each dish with the flair and description that it needs. The wine-list at the restaurant is also something to behold, as they have two 8cm thick wine lists – one for South African wine and one for International wine. And in these lists you will be able to find a wine that suits your pocket, as well as probably have more than 1 choice if you have decided on an amount! And they do not actually have the massive mark-ups on wine that other restaurants have.

A gastronomic experience that I will do over and over again, for both lunch and dinner!

Words cannot explain the experience at Restaurant Mosaic, it is the total experience, the food, the personalities of Chantel and Mari, the environment and the interior that all work together to make this such an unforgetable experience. We went in the day this time for Sunday lunch and I thought that this was a very good time to go as we had more time to savour the experience, we did not feel nervous to drive back home as we normally do if we drive back home at night and we had a beautiful view of the surrounding hills and beautiful landscape that you cannot see at night. The food was amazing once again with surprises in appearance and tastes. The new lady sommelier was very knowledgeable and friendly. This remains one of the best fine dining establishments in South Africa, if not in the world, A must visit when in Pretoria.

Went there with 4 friends for the 5 course tasting menu. Chantelle came out to explain the menu to us personally. She has the most amazing voice and kind smile. Every course was well paired by the sommelier, he was great and very down to earth. I particularly like the seafood starter as well as the artistic canvas of jellies. Neither of the two deserts blew me away, unfortunately. The Orient Hotel is a real surprise when you find it. The setting was beautiful.
