A caesar salad is one of the most simple salads to make. It includes few ingredients, which when fresh and in the approrpriate proportions is wonderful. A caesar salad does NOT contain olives of any color, nor does it contain tomato slices or red onion slices! It should have a light lemon vinegarette - not some gunky general purpose salad dressing. My "caesar" salad at DeMarco's was absolutely full of sliced green and black olives, 4 tomato wedges and several big red onion rings. At least the thousand island dressing came on the side in a classy pre-filled plastic container so it could be ignored. The person who made that salad should receive 50 lashes with an al dente cannelloni!
