My wife and I just returned from a trip to Tahiti. In general we found the food in French Polynesia to be good but not great. The exception was Chez Louise in Tahaa. We are a bit of a "Foodie" couple, having had the good fortune to have traveled and eaten at some of the highest acclaimed restaurants in Europe and the USA. I do not say this lightly when I write that we were both in agreement -- the seafood meal we had at Chez Louise was the BEST we had ever eaten in our lives. We enjoyed it so much that we went back the next night, which we have never done before -- eating at the same restaurant two times when in a new environment to explore. Prior to this trip this would have been unthinkable. But not after eating at Chez Louise. The next night was every bit as good as the first -- both truly incredible! Cracked Crab in a coconut milk beurre blanc sauce, Lobster, Shrimp and fresh fish prepared in delicious, unique subtle sauces. There are no menus, just the best preparation of the fresh catches of the day served in splits of large bamboo. Louise is joy to get to know and a naturally gifted chef who says her cooking ideas and talents come from God. We believe it. We were in heaven savoring every bite of her meal.
