Description: Conceived by Paul Pairet since 1996 and opened in May 2012, Ultraviolet is the first restaurant of its kind uniting food with multi-sensorial technologies A single table of ten seats only. A dining room of high-end technology. A 20-course "Avant-Garde" set menu. 3 Michelin stars. All guests sit together. The experience unfolds as a play. Food leads. Each course is enhanced with its own taste-tailored atmosphere: lights, sounds, music, scents, projection, images and imagination... And food.

Everything written about this experience is an understatement. We had the honor of being Table 88 .... Very lucky # in chinese culture... No luck involved in the epicurean experience...all skill and preparation. Every detail has been thought through several times to approach perfection... Including impeccably professional service that deserves applause. Fabien, our host, guided us through the introductions of each service and participated with the serving team. Everyone was served simultaneously and presented with a map of the origins of the ingredients and the best method of experiencing the dish. An unforgettable, truly intimate sensory experience fusing sound, visual, taste and smell. The intimacy of 10 diners made it a "family affair" with strangers.

What else can I say? Different from any other place, surprising, delicious, exquisite....
Worth the experience.

There's no words to describe the feeling of 22 individual dishes , accompanied by mood perfect music and walls that come alive with images. Even if you were to eat this food on the side of the road, it would already be the best in China. But since you're in a totally unique space, you literally will never ever forget this meal. Bravo.
Must be a San Pelligrino top 10 this year

I will keep this one short, Paul Pairet is a genius. I hope this man receives the attention and fame he has here in Shanghai around the rest of the world’s culinary scene. Im glad I have experienced UV in the early stages, feels like your part of Paul’s first steps in becoming a culinary icon.

I don't think there is much I can add to the previous review other to say that I wholeheartedly agree with their review. I was one of the lucky ones to get a seat and it was a night I'll never forget! I was apprehensive about the price at first but it is so worth it (and I'm a student.)

Our dinner ended up finishing at 12.30, so considering we started our drinks at 6.30pm this was one long night and worth the price. Put it into perspective - only $50/hr!

I could not fault the night at all. If there is such a thing as dining perfection this is it.
