Three years ago we were somewhat disappointed by the meals we had in Dubrovnik, but in Hvar it was very different. We went twice to the Passarola restaurant and it was the ability to do relatively simple things well that counted: an accompaniment of grilled potatoes with truffle sauce was simple, but luxurious in flavour as was the Swiss chard and fennel. On the second visit we had the charcoal grilled sea bass, utterly fresh and so different in texture and taste from the usual (paying by the weight means it is not cheap, but is good value). It is important to be upstairs in the open to have the whole experience, and also for wine lovers the local Hvar and Dalmatian wines are a treat worth experiencing.
