Amazingly awesome. The wait is part of the experience bring beer and a chair. It builds your anticipation and will not disappoint. Do it. Get there early. Get the brisket. OMG.

My wife and I are big BBQ fans. We travel around Texas for good BBQ and we also do a bit of smoking ourselves. We read the reviews about Franklin BBQ and decided to make the trip. We sat in line for 3.5 hours and finally ordered brisket and sausage. We hD asked for lean brisket but the brisket we received was full of fat. The brisket was bland and overcooked. The meat simple fell apart. I was shocked at the lack of flavor and that the meat was overcooked. This was supposed to be the best BBQ not only in Texas but the country. Definitely not worth $18.99/lb, the 3.5 hour wait, nor the 2 hour drive. We will not be returning nor do we recommend Franklin BBQ.

This is real Texas barbecue: they apply a thick dry rub to the meat, leaving on all the fat, and then cook the hell out of it. That is what real Texas barbecue is. Stood in line 2 hours with a complaining child, with repeated warnings from the staff that we waited at our own risk -- the food might be gone by the time we got to the counter. By the time we reached the front, we had our choice of brisket or brisket. No beans, no potato salad. So we ate brisket, brisket, cole slaw and white bread. And it was worth the wait. Great barbecue. Didn't need sauce, which was okay because the sauce was a bit thin and vinegary for our taste. Go there. Wait.You will see. Worth another trip to Austin.

Franklin Barbecue was great. I'm really picky about Barbecue and have been to many so-called "Bests" so while visiting Austin I had to try their Brisket. Nothing compares to Franklin's. Brisket was smoked to perfection and was so tender and absolutely wonderful with their combo of sauces. Experience was great too. Bring a lawn chair and your favorite beverage to make the wait more enjoyable and rest assured it will be worth it!

After standing in line for 3 hours, the barbecue was "just OK". Sorta a let down, but at least, we can say "We really did it".
