The service was good (Oregon in general has less obsequious wait staff than California), the food was amazing. We had a number of first courses which were prepared perfectly. We were going to share a main course and they split it for us at no extra charge which was nice of them. The flavors were robust and nothing overpowered the more subtle of them. It really was a perfect meal.

Four of us went to Amuse for an early dinner. For two of us, it was a new experience. The other two were seasoned visitors to the restaurant. Since none of us were terribly hungry, we ordered entrees which we split for a small plate charge. Two of us had aregula salad with fresh strawberries and cheese while the other two split a meat tray. For the entree, we ordered the halibut which was accompanied with a dente celery. The flavor of the halibut was exceptional and it was very fresh and tender. The bread served with the meal was very hot and fresh. For desert, we had an order (3 pieces) of beignets which were hot and accompanied by raspberry jam. We had had this desert in New Orleans where the desert is very popular but here in Ashland, our serving of it was light and fluffy, and did not have the startchy flavor of New Orleans. Of course they were sprinkled with powdered sugar which we enjoyed. The flavors of the food here were excellent and we shall return to try other items. The service was outstanding and our every need met. Because it is a small restaurant, there is limited seating. We got there just as it opened which was smart because it soon was completely filled. Parking was on the street and in a lot across the street after the bank closed. Once summer comes, it may not be as easy to visit as it was for us. Many people come early so that they can attend the plays. We were asked when we entered it we would need to be finished by the time the plays started.

Where other spots in town try too hard, or not hard enough, Amuse hits the right balance. Friendly, but not familiar or intrusive. Interesting ideas, without tortured efforts at innovation. And, most importantly, good execution in the kitchen. On our last visit, they made a nice fuss over our anniversary, and, this trip we had a nice quiet booth, which was just right. Best spot in Ashland.

My wife and I dined at Amuse before a show at the Shakespeare Festival and were VERY pleased. Our show was at 8 so we made 6 o'clock reservations. The staff is used to timing meals to make show openings and after confirming our curtain time our waitress took excellent care of us. We had a charcuterie plank for a starter, which consists of house cured meats with pickled haricourt vert, pickled garlic and onion, and warmed olives. The meat was very well prepared and the selection was varied enough to make the differing textures and flavors accent each other. As we had been dining on seafood all week on the California coast we opted for the ribeye steak with shoestring pomme frites and chard. We chose a Cowhorn Syrah for the meal. The steaks were perfectly cooked, with a small circle of herbed butter slowly melting on them, the chard cooked yet still slightly crunchy and the pomme frites light and crunchy. The dessert was rhubarb crisp with vanilla ice cream. The tartness of the rhubarb was perfectly offset by the rich sweetness of the ice cream. Amuse accepts reservations, and you should make them as the place fills up quickly and early.

We've been here many times but this time was exceptional. The service was pleasant and efficient, the food expertly prepared and presented. Have the beignets for dessert, even in New Orleans they weren't this good. Literally, air covered with delicate crust and sugar.
