Every time I have a visitor from the States, I take them to Fiesta. I have dreams about their ceviche a la brasa (hot ceviche). That is an absolute must-have. I haven't found a main course that blows my mind as much as the hot ceviche, but everything is still great-- I recommend the cabrito (baby goat) with mashed loche. Wait staff is very professional and pleasant, and atmosphere is great. Many (wealthy) locals come in with jeans and t-shirts even though the wait staff are in tuxedos, so it's not too stuffy of a place either. But you will pay a pretty penny.
