Matsue is a look in Japan's past, and like Kyoto and Kanazawa, is one of the few places that maintains a strong wagashi (traditional confectionery) culture with its tea ceremony culture. Also home to one of the few remaining original castles, and the whole town has interesting spots associated with its castle town use, or places Lafcadio Hearn visited and wrote about during the Meiji era. Lots of lakeside scenery and hot resorts. It's a little out of the way, but the payoff is that it's not overwhelmed with tourists, so you can enjoy classic Japan at your own pace.
