dined at quite a few high end sushi restaurants in japan, this one is of top quality!
dinner serves only omakase, jpy12,000 per person, in two rounds at 6pm and 8pm. accept reservation up to 3 months in advance. book as early as you can, a highly popular restaurant in Toyoma city. only 12 counter seats, plus a table that can accommodate up to 6 people.
chef Izumi Kimura is talented and friendly, speaks basic English, and he mentioned that he is about to go to Macau, invited by as a major casino, as a celebrity chef during the grand prix period.
sushi rice here features red vinegar. some sushi pieces such as those small white shrimps are local specialities. we were served 17 different items, including a salt gelato as dessert. the omakase course was wisely planed in terms of sequence, like a symphony allowing highlights one after another. both taste and presentation were simply superb.
will surely dine here again if i get to revisit Toyama city!
