I stayed at the InterContinental in Aqaba on the first Friday/Saturday of November this year. This meant that Aqaba town was filled with Jordanians escaping Amman for the beach for their weekend (which means the town was buzzing - a great thing to see).
The hotel was "very good" to "excellent" all round. It is a very impressive building with a great pool and private beach area in a prime spot on the bay of Aqaba. There's a huge development being built to the Western side of the hotel (but there's development all over Aqaba so this isn't unusual). This development will continue for a long time, but it didn't affect our stay in any way... the only noise we heard was from the music from the loud speakers down on the public beach in town (which blare out at a ridiculous volume!)
It COULD be said that the pool / beach area looked a little "tired" and I think it could certainly do with a spruce up soon, but this is being very picky. It's well worth getting one of the hotels with a private beach... the public beach is a no-go for Western women wanting to wear a swimsuit and other private beaches down the coast cost a lot to use... In terms of service down there, it was very good indeed, with complimentary water (in an ice bucket) accompanying your beach towels in the morning. The complimentary water was great all round actually - plenty each morning left in your room too, which was very useful. The ONE negative (and not really the hotel's fault) was a very large group of rowdy Polish men who stayed on our final night and noisily dominated the pool and jacuzzi in the late afternoon - just when we were nicely relaxed.
Our room was fantastic - can't fault anything in there at all and it had everything you'd expect from an international 5* hotel.
In terms of food, we only ate breakfast in the hotel, choosing to eat other meals in Aqaba itself (a much cheaper option)! The breakfast buffet though was excellent - it had everything to tempt you to stuff your face and to skip lunch!
All in all, a very, very good hotel. Not the BEST I've ever stayed in, but certainly worthy of it's 5 stars.
