The cooking class we did at Lantern Town with chef Son was one of the highlights of our trip to Vietnam. Son showed us how to make crispy spring rolls, sweet and sour soup, fish cooked in banana leaf and green papaya salad. He was a wonderful teacher, very generous with sharing both general cooking tips and his knowledge of Vietnamese cuisine, and his English was excellent.
After a couple of hours of cooking instruction we then enjoyed the dishes we had cooked as lunch. The spring rolls, made with high-quality, lean minced pork, were among the best we had in Vietnam. The sweet and sour soup was perfectly balanced and the green papaya salad cool and crunchy. We received copies of all the recipes we'd made so that we can replicate these dishes at home.
We also enjoyed a dinner at Lantern Town. We were there during Earth Hour and the staff lit the room with candles for the event. Food and cocktails were both great.
