We were looking for a cooking class that might offer something more adventurous and a prior review of the Deluxe class looked intriguing. Our class was just myself and my husband and it exceeded all of our expectations! Mr. Thai Kien picked us up at our hotel and took us to the market where we spent well more than an hour asking questions about the foods and buying ingredients. He wanted to know if we were looking to cook foods we could replicate at home or what type of experience we wanted. We asked to try the more exotic Vietnamese dishes which he created from a mix of ingredients we were curious about to others we would never have tried on our own.
Mr. Thai is fluent in English and French with a broad knowledge of western cooking practices which allowed us to really understand more about Vietnamese food traditions and how they relate to what we know. He has a restaurant background and takes care to show you good technique and presentation skills.
Wound up spending the entire day cooking and tasting probably 10 different dishes, each of which was excellent and unusual in its own way, from a sophisticated bun cha to anchovy appetizers to fried silk worms. The pace was casual with ample time to sit by An Bang beach and enjoy the food after cooking it. Good mix of hands on and prep help from an assistant.
We would highly recommend this class. At $54 per person, it was well worth it and would appeal to anyone looking for a more in-depth knowledge of Vietnamese foods.
