A coupke we met in Nha Trang told us about this cooking class, so when we got to Hoi An we decided to email them. Luckily they had space for two more in the afternoon class. After a trip to the local market to learn more about the Vietnamese spices, fruit and noodles we got on a boat ride. When we arrived at the cooking "house" we had a short introduction about their herb garden before we started the cooking part. It was much fun and we learned how to make some typical Vietnamese dishes. I would definitely recommend this class to others. All of the people were very friendly and helpful.
Can't wait to cook all of this at home!

We did a half day private cooking class, starting with the market tour. It was the afternoon, so they'd already bought our ingredients but our guide, Linh, was wonderful and explained everything. We cook a fair amount of Asian food at home but still learned heaps.
The market tour was followed by a trip up river (with fruits) and a tour of the herb garden, which was fascinating. We then started the class, with a chef leading us through each dish - which we then ate!. Each of the dishes was great, including making rice paper (can't see us doing that at home). We've already made some of the dishes and will probably make the rest. We finished with a fish dish in the restaurant that we hadn't made, which was a lovely end to the afternoon/ evening.

We booked a full day of cooking at the Red Bridge Cooking School in Hoi An, Vietnam and had a "blast." The full day tends to have less people and we were only six. They met us early in the morning and took us to the local market where we toured and picked up some ingredients for our class. Take your camera to this market. Pictures of the locals and the food are everywhere and sure to win you a photo contest. After this we took a short ride to the local organic farms where we walked learning about many of the local crops and, once again, picked up some vegetables for our class. We then drove for a while to the school, where our morning guide left us ( she was great), and we walked to a beautiful setting by the river where the facilities were located. We were given aprons and set to work chopping, dicing, boiling bones etc. The instructing chef was a young woman, who had a great sense of humor and made the class even more fun. They offer you soft drinks, wine and beer and as much as you want from the moment you arrive. We made about four dishes. The most fun was making rice pancakes over a strange boiling pot with a cloth cover, removing these pancakes with a bamboo utensil, and after making several, cutting them into noodles for your soup. It does not matter if you are a master chef or a novice, the day is a lot of fun and you get to eat what you cooked, which is a lot of food. We all really enjoyed this and I think the total cost was $50. Well worth it and something you will always remember.

We took the evening class and it was really good. The chef (Tanh?) was really great, preparing one version of everything for me (fish and seafood lover) and another for my boyfriend (no fish or seafood and different spice preferences). Tanh explained what all the ingredients were, asked if we could get different things in Vancouver and suggested replacements if we couldn't. She let us know health properties that were really helpful - like dragon fruit is good for lowering cholesterol.
In the end we had a ton of really great food - all that was promised in large quantities, and some Morning Glory thrown in extra.
A really great experience.

Decided to do the all day cooling course. Best decision. Trip to buy herbs, to the market, how to know if the meat and fish is fresh. We made 4 dishes including rice noodles from scratch. Tips in how to make things properly from cutting shallots vertically not horizontally, to grilling fish for a few moments either side to stop it falling apart in the clay pot. Hanh, Luna and the team made this day the highlight of our trip. Highly recommended!
