My wife and I did the full day cooking class along with two other couples. The grounds of the school are wonderful, and we enjoyed the quick walk through the herb gardens outside of Hoi An on the way there as well.
We felt that the chef on the day was just going through the motions, it was all blah blah blah, do this, chop that blah blah, he wasn't very interested in doing any more than the minimum.
I guess you can understand that if he did the same old thing day after day but we asked him if he does the tour every day and found he only did it occasionally.
He wasn't invested in us or the class and at the end he just vanished, the class were sitting eating what we'd made and we never saw him again, another young lady appeared from somewhere and bundled us into a boat and sent us on our way back to Hoi An.
So we didn't think it was worth the money and we have done more interesting cooking schools elsewhere.

WOW this was great! We are still here writing this review. Just to give you an idea of the day... welcome drink, Hoi An Markets to discover everything you wanted and didn't want to know about ALL things Viêt Nam- food- meat (fish, pig, beef, chicken, duck) vegetables, herbs and spices! Then by boat to the school. Herb garden tour, welcome drink and back to school- great chef/presenter with super humour! The preparation and cooking was right on the river. Plenty of help, if you need it? Eat mmm (*dont say 'yum'). Then more food at the restaurant! This is a MUST!!

I did not eat at the Hai Cafe however this cafe is to booking and meeting point for the excellent Red Bridge Cooking Class - 2 kilometers up the river by their boat - where there is also the great Red Bridge restaurant. Cooking class was very good value for money - started with a guided walk through the markets, then the boat trip and then a very well organised cooking class with a very good chef and lots of staff to assist us as we tried to recreate her delicacies. Excellent instructions and an amazing amount cooked in a short time. Plus we finished with a lovely fish dish in the main restaurant before returning back by boat to the Hai Cafe .

We spent a lovely day with Susan at the Red Bridge Cooking School. We did the whole day deluxe course ($45). It was just my husband and I and one other. It was a chilled out day, a lot less intensive than other cooking courses I have done before but we learnt a lot about vietnamese food and picked up some useful new skills and cooking tips.

It was free drinks all day so we enjoyed a cool drink from 8-8.30am at Hai cafe, until the minibus took us to the herb garden. It was a large plot tended by 200+ families. Susan gave us a good insight into Vietnamese herbs and uses, tasting along the way and followed by a good local drink to cool us down.

Next the market which we were a bit dubious about but with 3 people we could easily ask questions about the exotic fruit/veg/meat/fish. Our guide pointed out the ingredients she was buying to use later and answered our questions about the strange foodstuffs. So to the school, another drink and a dip in the pool before starting cooking.

We cooked ‘Pho’ with freshly prepared rice noodles. Lemongrass shrimp wrapped in Banana leaf which was delicious, then clay pot fish with fresh dill (which was yummy even though i never thought i liked dill!) and finally marinated grilled chicken with banana flower salad.

We are definitely gonna try to make these again at home especially the rice noodles.

We were meant to have a boat ride back into town but the heavens were about to open so we for the minibus instead. The recipes and apron are a nice reminder of the day.

We met at the Que (?) cafe and were quickly off on a walking tour of the local market. Our guide Luna was very informative explaining all the different fruits, vegetables, fish and meats and how to work out whether they were fresh or not.

A short boat ride to the school where we were met by our chef who proved to be very entertaining.

Demonstration of a range of simple dishes and some less than succesful attempts to replicate followed. After the classes we adjourned to a cafe area for a 3 course lunch.

Overall a lot of fun and well worth doing.
