We wandered into the Goreme Village Travel office in the late afternoon on our last day in Cappadocia, hoping to make arrangements for a last-minute observation of a dervish ceremony. We were in luck! Within minutes, the staff had called the driver (who is also the manager), who came in on his day off, saying it was no problem to take us to the caravansary. The few minutes we waited, the very sweet staff offered us tea and explained a bit about the ceremony.
The driver/manager was very attentive and gave us a thorough explanation of the history of the caravansary. It was so cool to know that (according to our guide) travelers along the Silk Road had stopped there to stock up on food at the market, and that the dervish ceremony takes place in what was once the indoor winter market.
