This was easily the best thing we did in Cappadocia. Mehmet has an incredible knowledge of all the valleys and trails around Goreme and you'll experience more in a few hours with him than any trip to the Open Air Museum or one of the colour tours. I'm not having a go at these, you should definitely do them too - but Mehmet is better.
With Mehmet we walked to places with great views of the valleys, climbed through ancient pigeon coops (more interesting than it sounds!), and saw amazing frescoes in churches cut into rock. Mehmet also knows a lot about the history of the area and the plants and creatures that inhabit it and is very easy to talk to. He's also very passionate about his local area and it shows and rubs off on you.
Mehmet mentioned he tailors the walks to the individuals, so I would guess he can accommodate most people and groups. If you doubt your fitness, ask him, I can't imagine him leading you astray.
