A group of professors from National Tsing Hua University took my wife and me to the Hsinchu branch of Din Tai Fung for dinner. This is the famous dumpling house chain that started in Taipei. The Hsinchu restaurant is located in the basement of a shopping complex and has been open for just over a year.
We had oh so many different varieties of dumplings, all of which were absolutely delicious. Although the restaurant was busy, it did not take very long to get our food. What was nice was that they didn't bring them out all at once, but rather staggered them so we could enjoy the dumplings hot. Had a few vegetable dishes too which were good, but the dumplings are what were outstanding.
It's fun to watch the folks in the kitchen (through a window outside the entrance) making the dumplings by hand. Hard to believe how uniform they make them. I guess when you do that for a living, you can be pretty consistent.
