I have been to many restaurants and bistros all over the Caribbean and some Europeans as well as central America and the USA. I want emphasize the fact that I am not a food critic but, I love food. Especially sea food and in particular "paella marinera". You see there is something special in the mixture of all kinds of sea food spices and rice that makes my mouth water. The other day I had the opportunity to delight me and my wife, with one of the best experiences in dinning. We decided to visit PALLET'S the trending new restaurant in Cartagena de Indias. We went on a Friday evening and Roberto, (the owner) came to welcome us. we sat on the terrace enjoying the smooth ocean breeze. Over the air we could hear nice relaxing jazz music playing. We were beginning to enjoy the evening. We went through the menu and decided to order...PAELLA NEGRA...OMG! exclaimed my wife, I told her I had tried it before elsewhere and that it was good. I was not prepared for what we received...the waiter had not yet reached our table and the aroma was already invading our noses, then there it was, it was a magnificent dish filled with all sorts of marine life exquisitely cooked and mixed in octopus ink tainted rice, the taste of ancient traditions invaded my mouth and my palate enjoyed an experienced never before encountered. It was pure delicious joy...once our pleasure consumed over copious glasses of white wine, we sat in contemplation and happily ended our dinner, dancing smooth romantic jazz played by the house band...in all an unforgettable experience. I recommend all locals and visitors to pay Pallet's a visit, you will never forget it!
