My wife and I ate dinner here on a Sunday evening. Really pleasant experience, high quality ingredients coupled with expert preparation makes a world of difference. My wife tried a "sampling" of appetizers with the chicken liver terrine (very well made and quite tasty, the poached egg (overpowered by the celery root puree but interesting nonetheless) and the beet salad (my wife is a bit of a beet salad enthusiast and she particularly loved this one). I went with the shrimp and grits appetizer (very tasty and filling) along with the asparagus/scallop pasta which was excellent. Overall a great experience with the addition of small touches such as the appetizer amuse bouche and small nougat dessert item. Desserts looked quite tasty but by that time my wife and I were stuffed. This place can hold its own with the best of AA.

Having experienced Vellum's Tasting menu on an earlier visit (see March 24 review), we ordered from the main menu this time. Our table of four enjoyed two apps, a Beet Salad (with Goat Cheese, Fennel, and Mixed Greens in Basil-Citrus Vinaigrette, $9) and a Mushroom Tart (with Tarragon and Aged Parmigiano-Reggiano & Tomato Sauce, $12), both flavorful and nicely presented. For mains, two orders of Pan-Fried Walleye (with hand-pressed Onion Broth, Shallot, Brandade, Apple, $23), one order of Lamb Rack & Shoulder (with Cabbage, Orange, Mint, Brussel Sprouts, $23) and one order of Agnolotti (with Smoked Ricotto, Tomato, $14) graced our table. The walleye was nicely flavored (one order slightly over-salted), the lamb superb and done to perfection, and the Agnolotti was pillowy and delightful; the sauce was a perfect balance to the richness of the cheese. Beyond quality, Vellum has the quantity right, too. No heaping mounds of food to force down, no need for a doggie bag. When you're finished, you're comfortably satisfied. Desserts are creative and as good as they sound.

Service was terrific with "Matt" shepherding us through the evening. He handled our questions about the food perfectly and his wine/food pairing recommendations showed genuine knowledge of how bringing those two components together can create a whole that is more than the sum of its parts. Wish Matt could be our server wherever we dine! Excellent job, Matt!

As I wrote in March 24th's review, Vellum is deservedly making it's mark as a real contender in Ann Arbor's fine-dining scene. Looking beyond the excellent food and service, Vellum's ambient noise is a bit more than I find comfortable, making conversation somewhat laborious; toning down the speakered music would enhance the guest experience. Vellum is a dinner-only venue at this point, but I have it on good authority that they're aiming to be open for lunch by the end of June. That will be a nice addition!

Bottom line, try Vellum for an excellent, creative dinner complemented by a well-developed wine list and great service. You'll spend more here than at a burger joint, but the quality/value relationship is there. Enjoy!

Four attractive men chat at the door. Four. First words are, "Do you have a reservation?" None of them can do more than seat you. They can't bring a wine list, salt and pepper or napkin when needed, no Hello, no smile. The server is overwhelmed but gracious. There is no backup for server in the form of mgmt or bus. Kitchen cranks some tasty food artfully prepared & served on brown waxed paper. This place has the prices and attitude of a Soho NYC restaurant without all the superfluous big city service.
P.S. If reason the wine took so long to arrive was that it Really had to be pulled from the cellar, seems like it would be served cellar temperature, not room temp.

Move over Pacific Rim, Logans, West End Grill and Roadhouse. We may have found a new Ann Arbor favorite. Following recommendations from our gourmet friends, we dined for Mothers Day at Vellum. Everything was perfect. Sauces and accoutrements were thoughtful and creative.

The steak tartare was in larger than usual pieces, adding texture, and its accompaniments were just right. We have eaten steak tartare a lot and this was the best we've had.. The country pate with sour cherries in several forms, was a natural complement to the tartare (and none too sweet)-along with a creme fraiche-Dijon mustard highlight.The chocolate gateau with raspberry sorbet was light, but rich, and delicious.

Long and impressive wine list (though a bit on the high side: $80 for Cloudy Bay Sauv. Blanc)?

We were impressed that chef/owner Peter came by to say hello a number of times.

my friends whitefish was superb; my scallops were tasty but surprisingly few. however, the waiter asked us about our dishes in a way that indicated he really wanted to know and when i mentioned my surprise at having so few scallops, he told us he would fix it and in five minutes - brought an additional plate full. as we were getting ready to leave, the manager came up to our table and told us that they were developing a new menu and really appreciated our feedback. great service, lovely surroundings, and quiet enough to talk. we will definitely return.
