Gauchos was on Calle Uruguay before this street became a popular nightspot strip. Located in a former residence in the Bella Vista style of chalet, the specialty is USDA Prime beef in Argentine cuts. The decor is simple yet elegant, in a sort of Pampas rustic, with white walls, terra cotta flooring and critter hides on the walls. Central to the operation is a full-spec Argentine grill behind glass along one wall, where white-aproned "parrilleros" grill the3 goodies. Chorizo, morcilla, bife de chorizo, entraña, and more sizzle away as large round "pan campesino", or country bread, warms along the edges. Waiters are old-fashioned, patient and helpful. The wine list is adequate, starring Argentine and Spanish wines, beef is always done spot-on, and the entire experience is just too comforting for words. Perhaps most importantly, this is a place where quality has not hiccuped once since they opened X years ago. Still the go-to steak place in Panama.
