When restaurant owners who are successful with a single site begin branching out, expanding, or franchising, it is common to see diminished quality of service. This has happened at Caplina in Lima, Peru. The food continues to be fantastic: a fusion of Peruvian traditional dishes and international ones. I recommend the grilled octopus, but I would stick to the traditional ceviches or seafood plates, more than meats or poultry.
Service was chaotic. Multiple waiters serving, or trying to serve, multiple tables. The main dishes ordered came, but the extra attention vanished once the guests were served their orders. No extra sauce, no extra drinks, no more bread, etc..
If you can tolerate the chaotic service, this restaurant in Miraflores, Lima is great.
