I guess these three words summarise and amazing experience and the thought behind each of the dishes.
This is a high class restaurant that offers the best of our peruvian food in a completely new and refreshed way.
Expect some amazing mixes of flavours, flowers to decorate and even carbonised ingredients that combined offer an absolute explosion of taste and feelings.
We stayed with a good friend for 3 hours here, enjoying the nice atmosphere, food and company. You won´t feel someone is rushing you, that´s what I´m trying to highlight.
For peruvian average the price is high but if you compare this with any high class restaurant in the US the price is completely acceptable.
A must be, since it´s the second peruvian restaurant on the top 50 worldwide list.

A very modern and fancy place with a comfortable atmosphere. Very good place to look for local dishes and specialities. The service si very good and the waitress was quite friendly with us. It is not too expensive and can fit any average traveller's budget. Highly recommended!

With all of the great reviews, I decided to save Central for our final dinner after an almost three week trip that ended in Lima. I was a bit "at risk" for criticism because we didn't want something that was too avant garde and unusual and I had suggested this restaurant. Sometimes when a chef gets too creative and takes too much risk the results are interesting but not really satisfying and fun. We wanted to experience contemporary Peruvian food, but we wanted real food. Central delivered! Great cocktails that take you beyond the Pisco Sour that you'll have virtually everywhere else in Peru. A fine wine list that concentrates on South America and offers interesting wines from Peru. Then to the menu. Yes..the tasting menu looked exceptional, but all four of us could not agree to do it. Instead we each ordered the starter course that appealed most to us, then we added two extra starters that we agreed we shouldn't miss. After those six, we each choose one entree. Everything, I mean everything, was simply spectacular. Portions are generous and easy to share, not bite sized as in some similar places. Central will also serve a nice amuse and several very interesting breads. You'll get to really experience what can be done in a country with such an abundance of produce, herbs, spices, fish, and meats. There is no reason to wander outside of Peruvian supplies. We sat at a table overlooking the main the floor, yet we could still watch the action in the show kitchen. We were invited into the small office area to see all of the local spices, blends, and grains that help make up Central's recipes. The plated presentations were artful yet simple. Even the choice of ceramics used to serve was detailed. One singular dessert was all we could do, and it was a nice finish. At about US$125 pp we felt like Central was a nice value compared to similar experiences in North America or Europe.

We had our best dinner during our week-long trip in Peru at Central. From the home-made little breads in the beginning to the dessert in the end - all the food tasted amazing. We didn't find the dining room particularly cozy: initially, we were seated at a table in the middle, with the AC blowing at us from all angles mercilessly (I was happy that I was wearing a hoody - because I was able to put a hood on:), but then we were able to move to one of the booths along the wall, and that was much better - even though it did not afford the same view of the kitchen (from the middle of the room, we could see the cooks working their wonders in the kitchen). Nothing is ever perfect, but our dining experience at Central would have been perfect but for this AC nonsense. The chef and his helpers clearly know what they're doing in the kitchen, and the waitstaff is super as well, but whoever manages the dining room temp should learn how to use the thermostat - or else get his paycheck reduced for all the power wasted on the AC. Our AC experience notwithstanding, highly recommend!
