The tasting menu was just incredible and so was the service. The food was a great mixture of Japanese style dishes with Peruvian specialities. An incredible experience.

Make your reservation at least 2 months before going to Peru. If you want to experience the food but don’t want to spend the $200 tasting menu you can order a couple of plates and share them. But if you have the money the 13 course tasting menu is definitely an unforgettable experience. The next time we are in Lima we plan to return to Maido. The only negative part of our meal was the noise level was a little unpleasant. This was not the case when we ate in Central. We could make conversation at the table at the table without raising our voices but the background noise level did take away from the experience. Our waiter told us that evenings are generally a little quieter but that the noise level is entirely dependent on the diners on that day.

We went for a birthday dinner January 2020 and each of us had the 11 course tasting menu. This restaurant definitely understands that clients will be taking pictures and they make sure that the dishes taste great and are presented artistically. Service is very attentive and the decor is modern and stylish. You better be hungry if you order the tasting menu. The food is rich and leans to protein. Cocktails are original. Best to reserve 60 days ahead. The flavors of the food erupt in your palate. Don't be squeamish. Just have the cuy. It's only one or two bites and tastes great. The substitute is just not worth it. Really good value when you consider what you are getting. Argentinian wines provide the best bang for the buck particularly the white Torrontes varietal. Unusual and compliments the original food.
Well worth the the money. Unforgettable.

Maido is one of those places that illustrates what is wrong with the old-fashioned Michelin guide. We have eaten at a significant number of 1, 2, and 3 star Michelin restaurants, and they were all excellent. Not all were terrific, but they all served great food. Maido, listed as one of the "50 Best Restaurants in the World" (which is a completely made up list generated by a group of businesses), would never make it as either a 2 or 3 star Michelin restaurant. The issues really have nothing to do with the quality of the food, but with the "niceties". You have to walk up two flights of stairs to get to the "private room", the napkins are too small, the glasses aren't crystal, the plates are not lavish sculptures. However, the food at Maido is easily on a par with any restaurant in the world. It is nothing short of divine. We were a party of 7 adults and were seated in the private room (they have no tables for 6 or more in the main restaurant). The Nikkei Experience tasting menu is not available for larger parties, so we ordered off the menu and made our own sharing experience. We ordered multiple servings of 9 different sushi (Classic usuzukuri Cabrillo tiradito and Nissei ceviche) and Nigiri (Unagi, Gunkan squid, a lo pobre steak and egg, tuna and yolks, and sea urchin and scallops) and shared them around the table. For the entrees, we had short ribs (cooked for 50 hours), crispy pork belly, ox tail, black cod, rice with sea urchin, seafood chaufa and sudado fish with clams. Everybody got a bite of whatever they wanted and we were all way too full to even think about dessert. Every single dish was absolutely fantastic. New flavors, old flavors reconsidered, exquisite touches on traditional dishes (chaufa), beautiful serving dishes. There simply wasn't a loser in the entire batch of dishes. Everyone in our group was delighted and satisfied. We accompanied the meal with two wines (an Argentine Malbec and a Chilean Carmeniere) I knew about but hadn't tried and both were standouts at just over 300 soles a bottle (less than $100). The meal ranked right up there as one of the top five meals of my life and one we will all long remember. The defining characteristic of a 3 star Michelin is "exceptional cuisine that is worth a special journey" and I would say that fits Maido well. It is worth a trip.
