Panchitas offers many standard Peruvian dishes prepared in an upscale environment. We found the restaurant on our own and loved it. Our Peruvian friends also chose it as a good example of local food, and we surprised them by knowing the GM from the previous evening. The food is a bit pricey, but if you are interested in trying some of the more . . . unique . . . offerings of Lima in a clean, beautiful place, try Panchitas.
The first night we had three samplers: egg rolls, street food (offal meat + sweetbreads), and stews (a few normal + lung, feet, heart, fried blood). It was mostly extremely good, although I confess that I didn't like the sweetbreads (thyroid glands).
The second night we ordered more normally, lomo saltado (heavy steak stir fry + potatoes and rice) and fried pork belly + roasted potatoes. It was amazing. Our local friends all ordered one of those dishes as well. The food is beautifully plated and extremely tasty.
The Pisco Sours are very strong; consider yourself warned.
The restaurant is only two blocks from the main square. We walked to and from both nights. It is a very safe part of Mires Flores (and thus a very, very safe part of Lima). Just watch your bags as if you were in any big city. They do not accept reservations, so be prepared to wait unless you show up early.
