Here you find probably the best pisco cocktails in town. There you can learn about the subtle differences in taste among different piscos and have very nice cocktails. Beware because the alcoholic grade is relatively high. To eat you will be amazed by the different flavors chef Israel Laura can achieve in traditional peruvian plates. The anticochos are something really special.

One of my favourite places en Lima.
Excellent quality of pure pisco Cholo Matias and Torre de la Gala. Ricardo Carío prepares the best chilcanos in the world. (national drink).
One of peruvian's most famous chef Israel Laura cooks there and his tapas and platillos are simply delicious!!! So, it's a 100% peruvian experience.
It's a must do if you visiting Lima!

I wrote a review of this locale some time ago when they were located down the street from Gaston & Astrid. They have moved to a larger location at the site of the old Esquina de Darío. This move has also converted them into what is known in Lima as a Resto-Bar. A bar with not only "piqueos" (appetizers) but also full meals.

This new offering was made possible when the original owner, Ricardo Carpio, teamed up with well known Israel Laura, a chef recognized all over the country for his former TV show, and his unique style of blending ingredients to feature delicious, hearty and filling dishes. Ricardo and Israel work together to create culinary experiences that are easily accompanied either by certain specific varietals of Pisco as well mixed drinks with Pisco as their base ingredient.

Should you want to explore the world of Pisco I can think of no better guide than Ricardo Carpio. The bar serves Pisco primarily from two Bodegas: Cholo Matias from Ica 180 miles south of Lima on the coast and Torre de La Gala from La Joya, Arequipa which is the highest production area in Peru. To experience the difference between Pisco distilled from the very same varietal (there are 8 Pisco varietals) from the coast and then from the altitude is get a mere glimpse of the history and art of this fine beverage. Not only will you appreciate the subtle aromas and taste if you choose to sip it straight; you will also notice these differences in a well prepared Chilcano at the hands of Ricardo or his well trained mixicologists. Cap off your visit with a shot of Inquebrantable, one of the finest examples produced in the traditional artisan way; either its pure variety (Puro) or what is known as Mosto Verde, which is Pisco produced from the very first gravity pressing. This fine Pisco can only be truly appreciated pure.

Since a pleasant spirituous beverage most always calls for food to accompany the experience, you are in for a real treat with whatever you select from Israel's season evolving menu. My favorites are his fish and or duck preparations but friends have sampled other delicious offerings. You wont go home hungry!

They are now open for lunch from Tuesday through Sunday and in the evenings from Tuesday through Saturday.

Pay them a visit. Your experience of Peru will be that much richer.
