Disclaimer: Even though I have lived in Iquitos I am not a big fan of "regional" food.
Blanquita is an institution in Iquitos. Started out selling juanes and in a table outside of Blanquita's house and now is a two-story restaurant.
Has the classics including cecina con tacacho, several different kinds of juanes, hen's soup and tamales. Portions are freaking huge. Not much variety if you are not into local food. For the light eaters, a tamal and some maduro frito, or empanadas de yuca are your best bet.
My group insists on going here several times when we are in town.
If you want to get the local food experience, this is probably your best bet.
