I came to Perú to research its various cuisines for my master's thesis. I heard in Lima, that there was someone doing nueva arequipeña cuisine. After some investigation, I found that it was Arthur Restaurant. For a young chef, Mr. Amato has an innovative approach to classic Arequipenian textures and flavors. I was equally impressed with both of modern decor within an ashlar space, as well as his light application of modern technique (molecular) to traditional cocina arequipeña. Arthur Restaurant is small and intimate, which allows Chef Arthur to personally greet each table of guests. The local gastronomic publicity machine is not behind Mr. Amato, like they are their other restaurants and that's their lost. When he does make it big, only he can claim participation in his much deserved success.
