I was in Cuenca for two weeks and ate out everyday at various places during my visit. Some places were hit or miss but Roux was definitely a hit. The decor was great inside and it only got better when we saw the garden out back. Great place to have the smoked bbq on Thursday's. The food was absolutely amazing, I had the shrimp scampi with white wine sauce which was spectacular. The owners Mike and Abby have a great story and helped make it one of our best nights in Cuenca. If your in Cuenca Roux is one of the places that you must try. It is a great hang out spot for locals and a great place to stop by for visitors.

Many so called Gringo Restaurants get heat for trying to bring a slice of North America to Cuenca, but at Roux you get the best of both worlds. You get Tuesday Trivia, Wednesday 1/2 price wine, Thursday Real Smoked BBQ, Classy decor and menu for Friday and Sat, plus a unique Sunday brunch AND you get to enjoy it in Beautiful Cuenca. It is truly better then home. Thanks to Abby and Mike for providing this for all of us.

Roux has become our neighborhood "go to" place for lunch, dinner or Sunday brunch. The food is consistently good and the atmosphere is relaxed and enjoyable thanks to delightful ex-pat owners Mike and Abby. Tuesday, Wednesday and Thursday nights are typically crowded "theme" nights. Tuesday is trivia night with drinks and appetizers, Wednesday has half price bottles of wine and Thursdays is now barbecue night. The Sunday brunch has also become quite popular, deservedly so. Friday and Saturday nights are less busy, but the food and ambiance are still first rate. I'd recommend trying the poached salmon with lemon-dill sauce if it's on the menu. I've never had better salmon anywhere. The burgers are probably the best in Cuenca.

I've been to Roux a number of times and really appreciate how it has slotted itself into the burgeoning restaurant scene in Cuenca. Roux is located on Avenida Paucarabamba (which seems destined to become Cuenca's new 'restaurant row').

Roux is an easy place to hang, airy, bright and with a bistro vibe that I personally really appreciate; never hushed or excessively somber in feel...a good atmosphere to converse, laugh and have fun with friends.

The menus offer the right number of options and are neither burdensome nor sparse. There is something for everyone and I appreciate the care that goes into the presentation.
This is seriously planned, fresh and well executed cuisine that still manages to not stumble over itself or come across as self-important.

There are outdoor areas that lend themselves to a great Sunday bunch experience under the trees. The owners, Abby and Mike, are super personable and sincerely welcoming.

Thursday is bar-b-que night at Roux and a variety of meats are slow-roasted in their new smoker.
Tuesdays there is a serious (and pretty packed) trivia night, Weds. is 1/2 price wine night (and pretty packed). And the grits and shrimp the brunch menu would make you think you are in Louisiana on a lazy Sunday afternoon. Which is not a bad thing,

There's a lot to like here and I believe Roux is that kind of friendly, quality, fun place where one could easily imagine becoming a 'regular'. Good stuff.

We recently had a very nice steak dinner at the Roux. The mushrooms and gravy were exceptional. I also had a great Margarita to accompany the dinner. It was followed with a fantastic brownie for dessert. The owners are from the States. And the majority of the clientele are gringos. However, the kitchen staff is comprised of Ecuadorians. Stop in, and enjoy!
