When I was in Cuenca three years ago, we went to Fabiano's several times. The food was always good, but the special touch was the way we were greeted and served. The human dimension elevated the experience.
Naturally, when I'm back in Cuenca, I have to return to a restaurant that had been reliable in the past. Unfortunately, things seem to have changed.
I'm sure they have expanded the restaurant so they can seat and serve more people. That is not a bad idea, but the atmosphere has to remain as it was. Unfortunately, it has not.
In the new arrangement, the server was quick and efficient, but the efficiency replaced the warm friendliness that I had experienced before. I went back a second night and found the same cool aloofness again.
Is the food good? Yes. Tasty and reliable. I just wish the experience surrounding the food had been better.
