I reviewed this restaurant about a year ago and gave it a low rating based on food and service. I'm happy to report that under new management, this place is beginning to sparkle. The room remains one of the loveliest and most fashionable in Cuenca - a very inviting retreat with views north to the Tomabamba River. Service is highly personalized, the menu has been thoughtfully revamped with Italian and Ecuadorian specialties, and very well executed. Pasta, for example, is home-made. Mariscos are impeccably fresh. Meat dishes feature choice cuts prepared exactly as ordered. Vegetables come straight from their garden. And - surprise! - the house wine is actually excellent. So we are happy to recommend Todosantos for dinner (also open for breakfast and lunch).
