Owner description: Taking a Chilean cuisine class with El café Vinilo’s chef was by far one of the best experiences I had in Valparaíso . This is the only place in the city that introduces participants to the history and culture of Chile and its food.The participants get to cook 5 to 6 traditional Chilean dishes. Gonzalo the chef gives the class in Spanish and English.Pebre, Pisco Sour, Ceviche ( The Chef explains the difference between Chilean and Peruvian Ceviche) Charquican (one of the most important dishes in Chile) Chuchoca de Maíz and Puré de papas con Naranja y menta which is a mi of mashed potatoes with oranges and mint .Before the class starts, we get all the ingredients needed at the local market where you can find all the typical Chilean fruits and vegetables.The class includes enough food samplings for most people to not need lunch afterwards

Great fun and an authentic cultural experience. Go to market then prepare and your own tasty Chilean food under the guidance of the very personable and attentive Chef Gonzalo.

we took the anti-tour. it was really nice to see the different hills in Valparaíso in such a short time, because it would take very long to do it on foot or by bus or cab. It is also nice to see places that you normally wouldn't, because you're travelling with someone who know the place very well. Gonzalo knows a lot of insider facts about the different buildings, which makes it very interesting.

Hanging out with Gonzalo in the city he loves was just fun. I took the antitour tour and really enjoyed it. We saw places that you wouldn't see unless you have an inside connection. Gonzalo was such a trip that I signed up for the cooking class the next morning. Again, it felt like an insider's perspective. We started the day in the local market picking the fruits and vegetables that we would use in preparing the dishes. Tagging along with a known local chef and learning about Chilean cuisine was well worth it.

We had a great experience with Chef Gonzalo, shopping at the market, preparing our ingredients, doing the cooking and of course eating the results of our labor. Gonzalo is a fun peson to spend time with, he has a lot of energy and is always moving. He's a good instructor too. He will soon be in a new home kitchen which he was very much looking forward to.

After spending a semester in Valparaíso, my friend and I had the most genuine experience and ate the best food we had eaten in 6 months during this cooking class. Chef Gonzalo Vial picked us up outside of Cafe Vinilo at around 11:30 and drove us to the market in Valparaíso. First of all, just getting the opportunity to see the distinct, beautiful markets that this city has to offer was an experience in itself - we saw huge rooms full of buckets of herbs and spices, and streets lined with fruit, vegetable, and fish vendors. Then he drove us through the hills of Valparaíso, pointing out some of the important yet less well-known buildings of the area, introducing us to his favorite Chilean music, and stopping to buy empanadas from his favorite empanada place. Then we went right to his home, where we briefly met his wonderful family. We worked in his kitchen for 5 1/2 hours. He insists that we prepare everything - he was a good teacher, patient, and we learned both the history of the food we were making and general cooking tips. He is friendly and easy-going and incredibly easy to talk to. The environment was very comfortable and fun, and the food was delicious! I highly recommend this class - I will always remember this day fondly!
